Pistachio Cookies without Filling
Large American-style cookies with pistachios and chocolate, made without any filling. The dough is mixed with butter, two kinds of sugar, and egg, then chilled well before baking so the cookies keep their shape. Roasted pistachios and chocolate chips add extra crunch and flavor.

- 125 g butter
- 5 g Brown sugar
- 8 g Zucker
- 1 Piece Egg
- 175 g Flour
- 0.5 tsp Baking powder
- 0.33 tsp Natron
- 1 Pinch Salz
- 5 g Pistazie
Preparation
1. Mix the dough
Melt the butter and let it cool briefly. Stir it smooth with the brown sugar and sugar, then add the egg, flour, baking powder, baking soda, and salt and mix into a uniform dough.
2. Fold in the mix-ins and chill
Toast the pistachios, let them cool, and chop them roughly. Set aside about one quarter of the pistachios and one quarter of the chocolate chips for decoration, then fold the rest into the dough. Chill the dough for at least 1 to 2 hours so the cookies do not spread too much while baking.
3. Shape the cookies
Divide the dough into 15 equal portions. Shape each portion into a ball, flatten it slightly, and top or press on the reserved pistachios and chocolate chips as desired.
4. Bake
Preheat the oven to 200°C top and bottom heat. Place the dough pieces on a baking tray lined with parchment paper, leaving some space between them, and bake for about 10 minutes. Let the cookies firm up on the tray first, as they will continue to set while cooling.
