Bun Bo Nam Bo – Rice Noodle Salad with Grilled Beef
A Vietnamese-inspired street-food salad with marinated beef, rice noodles, fresh vegetables, and a punchy nuoc cham dressing. The contrast of warm meat, cool vegetables, and crunchy toppings makes it especially varied. Each component is prepared separately and assembled at the end.

Marinade- & Fleischzubereitung
- 35 g Rindfleisch
- 2 Piece Schalotte
- 2 Clove Knoblauch
- 1 Tbsp Zitronengras
- 3 Tbsp Fish sauce
- 1 Tbsp Austernsauce
- 1 Tbsp Sesamöl
- 1 Tbsp Honig
- 1 Tbsp süße Sojasauce
- 1 Pinch Salz
- 1 Pinch Pfeffer
- 1 Sheet Limonenblatt
- 1 Piece Ingwer
Dressing Nuoc Cham
- 4 ml Wasser
- 3 Tbsp Zucker
- 3 Tbsp Fish sauce
- 1 Clove Knoblauch
- 1 Piece Ingwer
- 1 Piece Limette
- 0.25 Piece rote Paprika
- 1 Pinch Salz
- 1 Pinch Koriander
Beilage
- 3 Pckg Reisnudel
- 1 Piece Salatherz
- 1 Piece Gurke
- 1 Piece Paprika
- 2 Piece Karotte
Topping
- 1 Handful Peanut
- 1 Piece Röstzwiebel
Preparation
1. Prepare the beef and aromatics
Cut the beef into thin strips about 2 to 3 cm long and place it in a bowl. Dice the shallots and finely chop the garlic and ginger, then add them to the meat.
2. Mix the marinade and let the beef rest
Stir together the fish sauce, oyster sauce, sweet soy sauce, honey, sesame oil, lemongrass, lime leaves, salt, and pepper, then combine it with the beef. Mix everything well and let it marinate in the refrigerator for at least 1 hour.
3. Sear the beef
Sear the marinated beef in a hot pan or grill pan until cooked through. Take it off the heat a little early so it stays juicy.
4. Prepare the dressing base
Finely chop or blend the garlic, ginger, and red bell pepper. Dissolve the sugar in lukewarm water.
5. Finish the dressing
Stir the garlic-ginger-pepper mixture into the lime juice. Then mix in the fish sauce and, if desired, some chopped coriander, and season with salt to taste.
6. Prepare the vegetables and noodles
Cut the lettuce and the chosen vegetables into strips or bite-sized pieces. Finely chop any herbs if you are using them.
7. Cook the rice noodles
Cook the rice noodles according to the package instructions, drain them, and briefly rinse with cold water so they do not stick together.
8. Toast and crush the nuts
Toast the peanuts in a dry pan until golden brown, then crush them roughly. Set them aside afterward.
9. Prepare the optional topping
If using fried onions, keep them ready for serving.
10. Build the bowl
Arrange the lettuce, rice noodles, vegetables, and seared beef in bowls. Scatter the peanuts, fried onions, and herbs on top, then drizzle with some of the dressing.
11. Serve
Serve the bowls right away and add more dressing if desired.
