Preparation
1. Make the dough
Knead the flour, eggs, salt and olive oil into a smooth pasta dough. Wrap it and let it rest for about 30 minutes.
2. Mix the filling
Stir together the ricotta, cream cheese, Parmesan, nutmeg and a little pepper until you have a creamy filling that is easy to portion.
3. Shape the ravioli
Roll the dough out thinly, cut it into strips, place small mounds of filling on top, cover with dough and press the edges firmly to seal. Keep the ravioli on a floured surface until cooking.
4. Ravioli garen
Ravioli in leicht siedendem Salzwasser etwa 3–5 Minuten garen, vorsichtig herausheben und in der vorbereiteten Salbeibutter schwenken.
5. Roast the base
Brown the duck carcass, roughly chopped shallot, carrot, celery and garlic well in a pot or roasting pan until everything has taken on plenty of color.
6. Build with tomato paste and wine
Stir in the tomato paste, toast it briefly, then deglaze with the red wine. Let the wine reduce almost completely.
7. Simmer the jus
Add the chicken stock, thyme and bay leaf, then let the sauce simmer gently until it is concentrated and glossy. Strain it through a fine sieve and finish with the butter.
8. Cook the pea purée
Sweat the peas with the finely diced shallot in butter, add the cream and cook until tender. Then blend until smooth and season with salt and pepper.
9. Cook the duck breast
Score the duck breast skin, place it skin-side down in a cold pan and render it slowly until the skin is crisp. Turn it over, finish briefly to pink doneness, then rest for a few minutes and slice.
10. Cook the ravioli
Cook the ravioli in plenty of salted water until they float to the surface and are tender. Lift them out and let them drain well.
11. Crisp the sage
Briefly fry the sage in a little butter until crisp, then drain it on paper towels.
12. Plate the dish
Spread the pea purée onto the plates, arrange the duck breast on top and place the ravioli alongside. Spoon over the duck jus, scatter with Parmesan and finish with the crispy sage.
13. Salbeibutter machen
