Avocado Mousse with Salmon Tartare

- 2 Piece Avocado oil
- 2 Clove Garlic
- 4 tsp Balsamic vinegar
- 4 Tbsp Creme
- 2 g Salmon
- 4 Piece Spring onions
- 1 Piece Lime
- 1 Tbsp Öl
- 1 Tbsp Capers
- 2 tsp Honey
- 1 Pinch chili pepper
- 1 Pinch Salt
- 1 Pinch Pepper
Preparation
1. Make the avocado cream
Halve the avocados, remove the pits, and scoop out the flesh. Blend it with the garlic, balsamic vinegar, and cream until smooth, then season with salt and pepper.
2. Mix the salmon tartare
Dice the salmon and spring onions very finely. Season with a little salt and pepper, then mix with lime juice, the oil, capers plus a little of their brine, and the honey. Finish with chili to taste.
3. Layer and serve
Layer the avocado cream and salmon tartare alternately into glasses. If you want to serve it as a spoon appetizer, you can also plate it that way; according to the source, half the amount is enough for that.
4. Prepare ahead and chill
The avocado cream can be made a few hours in advance. To help prevent browning, place the pit into the cream and cover the surface directly with cling film.
